Sausage Soup

Ingredients

• 1 tbsp extra virgin olive oil
• ½ small white onion, diced
• 3 cloves garlic, minced
• 1 lb mild Italian sausage
• 1 can (6 oz) tomato paste
• 1 can (14.5 oz) diced tomatoes
• 1 tsp Italian seasoning
• ½ tsp salt
• ¼ tsp black pepper
• 4 oz cream cheese
• 1 cup chicken broth
• 1 cup heavy cream
• ¼ cup parmesan cheese

Steps

1. 1In a large pan over medium heat, add olive oil and sauté the diced onions until they become slightly soft.
2. 2Add the minced garlic and cook for an additional minute.
3. 3Add the sausage meat to the pan, breaking it up with a spatula, and cook until it is no longer pink, stirring frequently.
4. 4Add the tomato paste, diced tomatoes, Italian seasoning, salt, pepper, cream cheese, and chicken broth to the pan and stir to combine.
5. 5Stir in the heavy cream and Parmesan cheese.
6. 6Cover the pan with a lid and reduce the heat to low. Allow the mixture to simmer for 5 minutes.
