Lamingtons

Ingredients

• butter
• caster sugar
• eggs
• self-raising flour
• milk
• icing sugar
• cocoa powder
• butter
• boiling water
• desiccated coconut

Steps

1. 1Heat the oven to 180°C / 350°F and grease a 20 cm square cake tin. Line the base with paper.
2. 2Cream the butter and caster sugar until pale. Beat in the eggs one at a time. Fold in the flour alternately with the milk to a smooth batter.
3. 3Spread into the tin and bake for 30 minutes, until a skewer comes out clean. Cool completely — overnight is even better, the sponge holds its shape better when icing.
4. 4Cut the cooled sponge into 16 squares.
5. 5Whisk the icing sugar, cocoa, melted butter and boiling water to a smooth, pourable icing.
6. 6Working one at a time, dip each square into the icing using two forks, then roll in coconut. Set on a rack to firm up before serving.
