ANZAC Biscuits

Ingredients

• rolled oats
• plain flour
• caster sugar
• desiccated coconut
• butter
• golden syrup
• bicarbonate of soda
• boiling water

Steps

1. 1Heat the oven to 160°C / 325°F and line two trays with baking paper.
2. 2Combine the oats, flour, sugar and coconut in a bowl.
3. 3Melt the butter and golden syrup in a small saucepan over low heat.
4. 4Stir the bicarb into the boiling water and add to the butter mix — it will foam up. Pour into the dry ingredients and stir until evenly coated.
5. 5Roll heaped teaspoons of mixture into balls and place on the trays, leaving room to spread. Flatten slightly with a fork.
6. 6Bake for 12–15 minutes until golden brown. Cool on the tray for 5 minutes before transferring to a rack — they crisp as they cool.
